Lemon Mocktail

This lemon mocktail is so simple, extra refreshing, and made just a bit creamy thanks to the addition of a little coconut milk!

Ingredients
  

Lemon and Mint Simple Syrup

  • ½ cup water
  • ½ cup sugar
  • 1 tablespoon lemon zest (about 1 lemon zested)
  • 1 tablespoon mint sliced

Lemon Mocktail

  • sugar for rimming glass
  • lemon zest for rimming glass
  • lemon wedge for rimming glass
  • 3 ounces coconut milk
  • 2 ounces lemon juice fresh
  • 2 ounces lemon and mint simple syrup
  • 1 ounce honey
  • tonic water
  • lemon slices for garnish

Instructions
 

  • Start by making the simple syrup. Add the water, sugar, mint, and lemon zest to a medium saucepan and bring to a boil, stirring until sugar has dissolved, 2-3 minutes. Continue to simmer over low heat until the sauce begins to thicken, about 10-15 minutes. Let cool slightly then strain into a jar, pushing down on the mint and lemon zest to release as much of the simple syrup as possible.

  • Add sugar and lemon zest to a small plate, then use your fingers to rub the sugar and lemon zest together until combined. Use a lemon wedge to wet the rim of 2 glasses, then press the rims of the glasses into the lemon zest sugar to coat.

  • Add ice to a cocktail shaker then add coconut milk, lemon juice, 2 ounces lemon and mint simple syrup, and honey (see note). Shake welll for at least 20 seconds, then strain into prepared glasses filled with ice. Top off each glass with some tonic water and garnish with lemon slices.

Notes

Depending on how much ice you add to the cocktail shaker, the honey can get stuck to the bottom of the shaker if you leave it in there for too long, so once it's added be sure to shake well right away.
