Ingredients for the Chicken Fajitas
This recipe uses a simple list of ingredients that are fresh, satisfying, and nutritious!

- Chicken breasts - Cut into long strips making it perfect for adding to a tortilla.
- Olive oil - For coating the chicken with spices and cooking the chicken and onion.
- Chili powder, paprika, cumin, onion powder, garlic powder, oregano - The usual taco seasoning suspects!
- Cayenne and a sprinkle of crushed red pepper - With ½ a teaspoon of cayenne and a sprinkle of crushed red pepper, the chicken has a kick that’s the perfect amount of heat!
- Lime juice - also helps the spices coat the chicken and adds some brightness and zest.
- Onion - Pairs great with the chicken and peppers.
- Tortillas - Whichever kind you like best!

Step by Step Instructions for these Fajitas
This fajita recipe is done in just 40 minutes, is super simple, and turns out so colorful and fresh looking!
Step 1: Grill the peppers. Grill the Aurora Long Sweet Peppers until they are evenly charred and slightly softened. Remove from grill and slice into long strips. Set aside and keep warm.
Step 2: Season the chicken. In a medium bowl, add the chicken, 1 tablespoon of olive oil, the spices, and the lime juice. Combine until the chicken is evenly coated in the spices.
Step 3: Cook the chicken. Heat 1 tablespoon of olive oil in a large cast iron pan or skillet over medium high heat. Once hot add the chicken (in 2 batches if needed) and sear until both sides are blackened and the chicken is cooked through. Set aside and keep warm.
Step 4: Cook the onion. Wipe out the pan slightly if needed then add the remaining 1 tablespoon of olive oil. Add the sliced onion, season with salt and pepper, and cook over medium heat until softened, 5-7 minutes.
Step 5: Finish the fajitas. Return the chicken to the pan, add the peppers, and toss until combined and warmed through. Serve the fajita filling in tortillas with sour cream, avocado, cilantro, cheese, and salsa.
Tips for Making this Recipe
- While it may seem like a high quantity of spices, they ensure that the chicken will be perfectly seasoned and blackened so don’t be shy!
- I recommend using the Aurora Long Sweet Peppers as they have the perfect flavor to pair with the chicken, and the long strips work great in the fajitas.
- For this recipe I do like to thinly slice the onion, but not as thin as I would for other recipes as I think the bite from the onion is perfect in the fajita!

Definitely! The chicken will just be less spicy without it, but you could definitely leave it out or use less.
We love using the Aurora Long Sweet Peppers in these fajitas because of their sweetness, and the long strips are perfect with the chicken and onions!
A cast iron skillet works great for searing the chicken at a high heat so that the spices blacken and the chicken gets a perfect char!
Storing and Freezing
The chicken, peppers, and onions can be stored in the fridge after cooking for 3-4 days and reheated in the microwave when ready to eat and assemble the fajitas.
I don't recommend freezing the vegetables, but the chicken can be frozen once cooked for up to 4 months.

- 3 tablespoons olive oil divided

- 2 teaspoons cumin
- 2 teaspoons onion powder

- ½ teaspoon cayenne
- 1 teaspoon kosher salt

- 8-12 tortillas flour or corn
