Key Ingredients
This chicken parmesan soup uses simple pantry staples and fresh herbs to create a rich, cozy meal with classic Italian flavor.

- Butter and olive oilย - Used together for sautรฉing the onion and garlic over medium heat for maximum flavor.
- Onion & garlicย - Create a flavorful base that anchors the soup.
- Ground chickenย - Cooks quickly and becomes golden brown, making it perfect for a lighter take on chicken parmesan. Seasoned to perfection with some dried spices and it ends up with so much flavor!
- Tomato pasteย - Cooked down briefly to deepen the tomato flavor before adding the broth.
- Marinara sauceย - Forms the backbone of this comforting soup and keeps the recipe weeknight-friendly. My favorite jarred sauce is Mezzetta, but you can use whichever you prefer!
- Chicken broth or chicken stockย - Adds richness and body to the soup; unsalted broth lets you control the salt amount. You can also use homemade if you like!
- Pastaย - Penne works well, but ditalini pasta is a great option for a more classic soup texture.
- Heavy creamย - Stirred in at the end to give the soup a rich, velvety finish.
- Fresh basil & parsleyย - Add brightness and freshness to balance the rich tomato base.
- Mozzarella cheese & parmesan cheeseย - Melted into the soup and sprinkled on top for classic chicken parmesan flavor and cheesiness.
- Panko breadcrumbsย - Sprinkled on top to add the breadcrumb vibe that regular traditional chicken parmesan has!

Step by Step Instructions
Is there anything better than a meal made in one pot? I think not!
Step 1: Cook the onion and garlic.ย In a very large dutch oven or saucepan heat butter and olive oil over medium heat. Add onion and sautรฉ until softened, about 5-7 minutes. Add garlic and sautรฉ until fragrant, 1-2 minutes.
Step 2: Cook and season the ground chicken. Add in ground chicken and stir, breaking apart, until fully browned. Stir in salt, pepper, oregano, basil, crushed red pepper flakes, and garlic powder, cooking for an additional 1-2 minutes.

Step 3: Add the tomato paste. Move the ingredients aside to create an opening to add the tomato paste in the center of the pan, cooking it down for 3-4 minutes, then stirring to incorporate.

Step 4: Add the marinara and broth. Add in the marinara sauce and chicken broth, then bring to a gentle boil.

Step 5: Add the pasta. Add the pasta (SEE NOTE), and cook for the number of minutes on the package, stirring often. If it starts to get too thick before the pasta is done, add ยฝ cup water, and if needed another ยฝ cup water.

Step 6: Stir in remaining ingredients. Shut off heat and stir in heavy cream, parsley, basil, mozzarella, and parmesan until the cheese is melted.

Step 7: Garnish and serve.ย Serve with additional shredded mozzarella, basil, panko breadcrumbs, and flaky salt.

Pro Tip!
If you prefer a more brothy soup you can add more chicken broth as needed or a splash of water.
Tips for the Best Chicken Parm Soup
- Cook the tomato paste fully.ย Letting it cook for a few minutes before adding liquid creates a deeper, more savory flavor.
- Watch the pasta closely.ย Cook until just al dente so it doesn't become mushy.
- Save the cheese for last.ย Stir in mozzarella and parmesan off the heat so they melt smoothly without becoming stringy.
