    Step by Step Instructions

    Is there anything better than a meal made in one pot? I think not!

    Step 1: Cook the onion and garlic.ย In a very large dutch oven or saucepan heat butter and olive oil over medium heat. Add onion and sautรฉ until softened, about 5-7 minutes. Add garlic and sautรฉ until fragrant, 1-2 minutes.

    Step 2: Cook and season the ground chicken. Add in ground chicken and stir, breaking apart, until fully browned. Stir in salt, pepper, oregano, basil, crushed red pepper flakes, and garlic powder, cooking for an additional 1-2 minutes.

    Step 3: Add the tomato paste. Move the ingredients aside to create an opening to add the tomato paste in the center of the pan, cooking it down for 3-4 minutes, then stirring to incorporate.

    Step 4: Add the marinara and broth. Add in the marinara sauce and chicken broth, then bring to a gentle boil.

    Step 5: Add the pasta. Add the pasta (SEE NOTE), and cook for the number of minutes on the package, stirring often. If it starts to get too thick before the pasta is done, add ยฝ cup water, and if needed another ยฝ cup water.

    Step 6: Stir in remaining ingredients. Shut off heat and stir in heavy cream, parsley, basil, mozzarella, and parmesan until the cheese is melted.

    • 2 cloves garlic minced
    • 1 pound ground chicken
    • ยพ teaspoon kosher salt
    • ยพ teaspoon black pepper
    • ยฝ teaspoon oregano dried
    • ยฝ teaspoon basil dried
    • ยฝ teaspoon crushed red pepper flakes
    • ยฝ teaspoon garlic powder
    • 2 tablespoons tomato paste
    • 1 24-ounce jar marinara sauce
    • 1 32-ounce box chicken broth unsalted
    • 8-10 ounces penne pasta (see note)
    • ยฝ-1 cup water as needed
    • ยฝ cup heavy cream (or light cream)
    • ยผ cup parsley chopped
    • ยผ cup basil ribboned, plus additional for topping
    • ยพ cup mozzarella shredded, plus additional for topping, see note
    • ยผ cup parmesan shredded

    Notes

    Servings: This would feed 4 generously or 6 with a side salad or crusty bread for dipping. See below note regarding amount of pasta to use.
    Amount of pasta:ย This soup serves 4-6 people so if you're only serving 4, or like a more brothy soup, I would just use 8 ounces of pasta.
    Amount of cheese: Please add more to your heart's desire.
    Adding in pasta:ย If you plan on having leftovers, I definitely recommend cooking the pasta separately and adding it in before eating each serving, as when refrigerating the leftovers the pasta will become overcooked and will soak up too much of the rest of the sauce. If cooking it separately, you also obviously do not need to add the additional water to the soup.
    Storage and reheating: Store chicken parmesan soup in an airtight container in the fridge for up to 4 days. Reheat gently on the stove over medium heat, adding a splash of chicken broth if the soup has thickened.
