    Late Summer Salad (Avocado & Corn Salad with Chicken, Peaches, and More!)

    This late summer salad is so fresh, easy to make, and extra delicious with a homemade honey lime vinaigrette.

    Ingredients
      

    Late Summer Salad

    • 2 ears of corn on the cob
    • 2-3 persian cucumbers
    • 2 cups cherry tomatoes
    • 1-2 peaches
    • 2 chicken breasts fully cooked, seared or grilled
    • 2 avocados
    • 8 ounces feta block not crumbled
    • basil fresh, plus additional for garnish
    • mint fresh, plus additional for garnish

    Honey Lime Vinaigrette

    • ¼ cup olive oil
    • juice of 1 lime
    • 2 cloves garlic minced
    • kosher salt
    • black pepper
    • 1 tablespoon honey
    • 1 tablespoon red wine vinegar
    • squeeze of dijon mustard

    Instructions
     

    • Cut corn off of 2 ears of corn, dice 2-3 Persian cucumbers, halve 2 cups cherry tomatoes, cube 1-2 peaches, cube 2 grilled chicken breasts, dice 2 avocados, cube 8 ounces feta, and slice some basil and mint into ribbons. Add everything to a large bowl.

    • Make the vinaigrette by combining all vinaigrette ingredients in a small-medium sized bowl. Whisk very well to combine then test and add additional salt if needed.
      ¼ cup olive oil, juice of 1 lime, 2 cloves garlic, kosher salt, black pepper, 1 tablespoon honey, 1 tablespoon red wine vinegar, squeeze of dijon mustard
    • Pour vinaigrette over salad and toss well to combine. Serve with additional fresh herbs.
