Late Summer Salad (Avocado & Corn Salad with Chicken, Peaches, and More!)
This late summer salad is so fresh, easy to make, and extra delicious with a homemade honey lime vinaigrette.
Ingredients
Late Summer Salad
- 2 ears of corn on the cob
- 2-3 persian cucumbers
- 2 cups cherry tomatoes
- 1-2 peaches
- 2 chicken breasts fully cooked, seared or grilled
- 2 avocados
- 8 ounces feta block not crumbled
- basil fresh, plus additional for garnish
- mint fresh, plus additional for garnish
Honey Lime Vinaigrette
- ¼ cup olive oil
- juice of 1 lime
- 2 cloves garlic minced
- kosher salt
- black pepper
- 1 tablespoon honey
- 1 tablespoon red wine vinegar
- squeeze of dijon mustard
Instructions
- Cut corn off of 2 ears of corn, dice 2-3 Persian cucumbers, halve 2 cups cherry tomatoes, cube 1-2 peaches, cube 2 grilled chicken breasts, dice 2 avocados, cube 8 ounces feta, and slice some basil and mint into ribbons. - Make the vinaigrette by combining all vinaigrette ingredients in a small-medium sized bowl. Whisk very well to combine then test and add additional salt if needed.¼ cup olive oil, juice of 1 lime, 2 cloves garlic, kosher salt, black pepper, 1 tablespoon honey, 1 tablespoon red wine vinegar, squeeze of dijon mustard
- Pour vinaigrette over salad and toss well to combine. Serve with additional fresh herbs.
