    With juicy seasoned beef, two kinds of melty cheese, and a crispy spring roll wrapper, these cheeseburger spring rolls are a delicious app. I've been dreaming about these ever since my last Cheesecake Factory visit, and I finally recreated this copycat version at home! My husband even said these homemade ones are better.

    These cheeseburger spring rolls are crisp, golden pockets of indulgence, stuffed with juicy, seasoned beef and gooey melty cheese. The combination of cheddar and American cheese gives each bite a rich, gooey texture that's perfectly balanced by the crispy wrapper.

    If you've ever tried the spring rolls at Disney World, you'll notice the resemblance, they're the same fun, handheld twist on a classic cheeseburger, just a little more indulgent when paired with that secret sauce just like at the Cheesecake Factory.     Here's what you'll need to make these cheeseburger spring rolls which have all the flavors of a classic cheeseburger, wrapped up and fried to golden perfection!

    • Onion - Slowly cooked diced onions are cooked until deeply caramelized, which adds richness and depth. I also noticed the Cheesecake Factory spring rolls did not have any onion bite to them, so by caramelizing the onions it creates the softest texture.
    • Sugar - A pinch helps the onions caramelize evenly and enhances flavor.
    • Ground beef - Juicy and flavorful! The 80/20 fat content keeps the filling rich.
    • Garlic powder & paprika - Seasonings that give the beef that signature savory kick.
    • Worcestershire sauce - Adds umami and a slight tanginess to the beef mixture, along with that classic cheeseburger flavor.
    • Cheddar cheese - Melts into the beef for gooey, cheesy bites.
    • Spring roll wrappers - Crispy, golden shells that hold all the filling perfectly.
    • American cheese slices - Placed in the wrappers to ensure every bite is melty and indulgent, and that they have a layer of cheese all along the edges.
    • Vegetable oilย - For frying the spring rolls to a crisp, golden finish.
    • Secret sauce - A homemade blend of mayo, ketchup, relish, yellow mustard, Worcestershire, paprika, and onion powder, for dipping.
    • Parsley - Freshly chopped for garnish and a touch of color. Also helps match the Cheesecake Factory vibes!

    Step by Step Instructions

    Other than caramelizing the onions (which in my opinion is definitely worth it!), these spring rolls are pretty easy to make and taste so much like the Cheesecake Factory's!

    Step 1: Caramelize the onions. In a medium skillet over medium low heat melt the butter. Add diced onions, a pinch of sugar, and a pinch of salt. Cook, stirring often, over medium low heat until very caramelized, about 35-40 minutes (see note). Remove from heat.

    Step 2: Cook the ground beef. Meanwhile, heat a large skillet over medium high heat. Add ground beef and cook, breaking up into small pieces until very browned.

    Step 3: Season the ground beef and add cheese and the onions. Season the ground beef with the garlic powder, paprika, kosher salt, and black pepper. Add in the Worcestershire sauce, stir, and cook an additional minute. Stir in the caramelized onions and mild cheddar until the cheese is melted and everything is gooey and well combined.

    Step 4: Assemble the spring rolls. On a clean work surface, take 1 spring roll wrapper and face it towards you like a diamond. Add 1 American cheese slice also as a diamond. Using a slotted spoon (see note), scoop about 2-3 tablespoons ground beef on to the middle of the cheese slice. Form it loosely into a rectangle across the middle. Dip your finger in a small bowl of water, and run it along each edge of the wrapper. Fold the left and right corners in towards the center, then pinch down lightly (see photo). Lift the bottom corner over the beef, then gently roll it up. Place on a parchment paper lined baking sheet and proceed with remaining filling. I usually make about 8-10 spring rolls.

    Step 5: Deep fry the spring rolls.ย Fill a large deep skillet with enough vegetable oil to reach about 2 inches up the side of the pan. Heat oil until it reaches 350ยฐF. Gently squeeze each spring roll into a cylindrical shape so it is not flat. Fry in batches using tongs or a spider strainer, tossing until each side is fried. Once very golden brown, remove to a wire rack.

    Step 6: Make the secret sauce. Make the secret sauce by whisking together all ingredients in a medium bowl. Refrigerate until ready to serve.

    Step 7: Serve the spring rolls. Season fried cheeseburger spring rolls with parsley and serve immediately with prepared secret sauce.

    Pro Tip!

    If you want your spring rolls to be nice and cylindrical like you'd find in a restaurant, immediately before placing in the frying oil gently roll them in your hands so that they're round and don't have flat sides.

    Tips for Making these Cheeseburger Rolls

    • Caramelize the onions slowly: Low and slow brings out their natural sweetness, which balances the savory beef and cheese. The Cheesecake Factory's have a strong sweet onion flavor, but I didn't notice visible onions, so creating a caramelized onion paste adds so much flavor without a crunchy texture. If needed, a little water added to the skillet helps the small onion pieces not burn.
    • Roll carefully: Make sure to brush water around the edges and pinch tightly to prevent filling from leaking during frying.
    • Don't overcrowd the pan: Fry in batches if needed to maintain the oil temperature and ensure even, golden crispiness.

    FAQs

    What if I don't have a deep frying pan?

    A dutch oven also works great, just make sure you have at least 2 inches of oil so the spring rolls can fry evenly, and free space at the top so the oil doesn't bubble over.

    Can I make the secret sauce ahead of time?

    Absolutely! Store the dipping sauce in an airtight container in the fridge for up to 1 week. Whisk before serving.

    Can I freeze these spring rolls?

    Yes! Wrap individually in plastic wrap and freeze on a baking sheet. Once frozen, store in a freezer-safe bag for up to 2 months. Reheat in the oven at 350ยฐF until crispy.

    Storing and Reheating

    Keep any leftover spring rolls in an airtight container in the refrigerator for up to 2 days. Store the secret sauce separately.  

    Reheat in a 350ยฐF (175ยฐC) oven for 10-12 minutes, or until crispy and warmed through. Avoid microwaving if possible, as it can make the wrappers soggy.

    • 8-10 spring roll or egg roll wrappers
    • 8-10 slices American cheese
    • vegetable oil enough to fill a deep skillet up about 2 inches

    Secret Sauce

    • ยฝ cup mayo
    • 1-2 tablespoons ketchup
    • 1-2 tablespoons sweet pickle relish
    • 1 teaspoon yellow mustard
    • 1 teaspoon Worcestershire sauce
    • ยฝ teaspoon paprika
    • ยผ teaspoon onion powder

    Instructions

    Notes

    Caramelizing onions: If any of the small pieces of onion burn at all, you can add in a few teaspoons of water and it will help reincorporate everything.ย 
    Scooping the beef: The ground beef and cheese will leave some residual grease in the pan so I like to use a slotted spoon or a gloved hand to scoop out the meat mixture so excess grease doesn't end up in the spring rolls.
    Storage: Keep any leftover spring rolls in an airtight container in the refrigerator for up to 2 days. Store the secret sauce separately.
