If you happened to watch our Bubbly Rose Rosé video on Instagram, you may have already seen our frozen strawberry roses! We posted that video a little before Valentine's Day and were completely overwhelmed with the kind comments and excitement over the rose-shaped frozen cubes made from slices of strawberry! We originally weren't planning on making a separate blog post for them, but they got us thinking about other types of flowers that we could replicate with different types of fruit (peep the frozen blueberry "hydrangeas"!) and it felt only right to keep them all together in a post!
While I originally thought the strawberry roses were a fun idea for Valentine's Day, I absolutely never could have imagined getting messages from people on social media saying things like they were planning on making them for a relative's 70th birthday party, or that they were going to make them for their wedding (!), or that ideas like this make life not boring. These edible flower ice cubes (made from fruit…not flowers!) would be perfect for a baby shower, bridal shower, some garden cocktails, any special occasion, or whenever you want a beautiful addition to any drink or mocktail that will up your beverage game!

Why You'll Love these Fruity Floral Cubes
- They add a touch of elegance to anything. While these fruity cubes are super simple, they add the prettiest touch to any beverage! I've added some leftover ones to even just water at night, and they sparked so much joy!
- It's a fun way to add some fruit to beverages! If you have some strawberries or blueberries in the fridge and you aren't sure how to use them, these pretty cubes are a great option.
- They actually kind of look like beautiful flowers! I was excited about trying the strawberry roses, but when they actually looked like roses I was a tad shocked and extremely excited! Add these to your next garden party or to elevate some summer cocktails and I think you'll agree the fruit cubes really are reminiscent of flowers!
Ingredients for these Frozen Fruit Cubes
The ingredients used (other than the fruit) are really up to you, but we include some suggestions below for what we used and like best!
Strawberry Roses:
- Strawberries - Try to find the freshest bright red ones you can, and make sure to thinly slice them so they're easy to bend but not so thin that they're translucent.
- Rosé wine - Yup, rosé does freeze! 😊 It holds the strawberries together really well and also adds the best flavor when the cubes start to melt into the prosecco. Kind of like a rosé spritz! My favorite rosés are Whispering Angel, Gerard Bertrand, and La Vieille Ferme.
- Prosecco - You can use any kind you like, Josh or La Marca are two of my reasonably-priced favorites. Champagne also works great.
Blueberry Hydrangeas:
- Mint leaves - I recommend picking ones on the smaller side of each branch of mint so that once they do melt into the drink they're not completely overpowering! If you want to try a different type of fresh herbs I would recommend rosemary. I don't think basil would do well in the freezer.
- Blueberries - Try to use ones on the slightly smaller side because it makes it easier to stack them in the ice cube tray.
- Lemonade - I love the taste of lemon and blueberry together so thought lemonade would be the perfect thing to freeze the blueberries into place! Alternatively, you could try using a lemon seltzer. I also think the lemon helps keep the mint leaves green.
- Prosecco - Same as above, whatever kind you prefer!

Step by Step Instructions
Both the strawberry roses and blueberry hydrangeas have simple steps and just require some freezing time before enjoying them.
Strawberry Roses:
Step 1: Prepare the strawberries. Slice strawberries vertically into thin strips, making sure they are thin enough to bend but not translucent.
Step 2: Layer the strawberry slices. Arrange some of the larger slices inside squares of a square ice cube tray (I used that one with squares a little over 1 inch) with the pointed ends facing up. Continue layering with smaller slices until each square is filled in and they look like roses.
Step 3: Pour in the rosé then freeze. Pour rosé into each strawberry square until it fills to the top of the tray. Freeze for 3-4 hours or until the rosé is very frozen.
Step 4: Finish with prosecco. Remove strawberry roses from the ice cube tray and place a few in a martini, coupe, or wine glass. Top with prosecco and enjoy!
Blueberry Hydrangeas:
Step 1: Add in the mint leaves. Arrange 3 small to medium sized mint leaves inside squares of a square ice cube tray with the pointed ends facing up.
Step 2: Fill the cubes with blueberries. Fill each square with blueberries, creating a small pile at the top.
Step 3: Pour in the lemonade then freeze. Pour lemonade over each pile of blueberries until it fills to the top of the tray. Freeze for 3-4 hours or until the lemonade is very frozen.
Step 4: Finish with prosecco. Remove bluberry hydrangeas from the ice cube tray and place a few in a martini, coupe, or wine glass. Top with prosecco and enjoy!
Tips for Making these Beautiful Ice Cubes
- I recommend not filling in every ice cube tray square as it makes it difficult to assemble them without bumping them or having them accidentally freeze together.
- It's easiest to pour in the rosé or lemonade using a glass with a small spout since the cubes are so small and it's easy to overflow them if you're pouring out of something like a large jug of lemonade.
- Make sure to freeze them until they're extremely solid because if they're only partially frozen they will fall apart quickly once added to a glass with prosecco.
FAQs
I have this silicone ice cube tray with square cubes that are just a little over an inch wide! It seems to be the perfect size and the silicone makes it super easy to pop the finished cubes out. If you have large ice cube trays then you will just need a higher quantity of strawberries and blueberries. I recommend not using an ice tray that is too deep as the fruit may get covered by whichever liquid you're using.
For the strawberry roses, instead of using rosé you could freeze them together with any type of juice, such as orange juice or lemonade, or even regular tap water or filtered water. For the poured over drink for both, you could use your favorite non-alcoholic prosecco, a sparkling seltzer, or your favorite beverage that's fizzy.
As long as you pour the lemonade over the pile, make sure to freeze the cubes until they are completely frozen, and don't bump the top of the pile, they should all stay on!
I tried the blueberry cubes twice and the mint did not turn black either time, it only turned a slightly darker green! I believe the lemonade helps it keep its color, so if you use a different beverage in place of lemonade I'm not sure if the mint will retain its color - if you try it let us know!
Storing and Freezing
When removed from the freezer make sure to serve them right away as they can melt fairly quickly depending on the temperature of where you are.
Leftovers can be stored in the freezer, but just note that since they are not covered they will start to accumulate freezer burn and lose their vibrant colors so I recommend enjoying within a few days for best results.
