STEP 1: Combine the dip ingredients. In a food processor, combine the ricotta, parmesan, olive oil, honey, garlic, thyme, salt, and a pinch of pepper. Pulse until smooth and creamy.

- I definitely recommend using whole milk ricotta, as it adds some extra creaminess and the best texture for this dip.
- This dip is extra delicious topped with additional olive oil, honey, thyme, salt, and pepper! While it's so good on its own, since ricotta is pretty mild the additional toppings add the best flavor.
- A food processor is key to ensuring the ricotta is perfectly whipped, and definitely changes the texture as opposed to just mixing everything in a bowl. If you don't have a food processor I think a blender would also work!

This recipe only calls for 1 tablespoon of olive oil to be combined with the ricotta, which ensures the dip itself does not end up too thin.
Can I leave out the parmesan in this recipe?
Yes, if you don't like parmesan or don't have it on hand you can definitely leave it out, I'd just recommend adding some additional salt to balance out the creaminess from the ricotta.
How do I make sure the ricotta doesn't end up grainy?
A food processor is best for ensuring the ricotta is whipped and smooth, but I also think a blender could be used if you don't have a food processor handy!
Storing and Freezing
This whipped ricotta dip can be stored in an airtight container for 2-3 days in the fridge. I'd recommend adding any additional toppings once ready to serve, and also to stir the ricotta dip thoroughly before plating.
