Ingredients for this Mocktail
The ingredients for this mocktail couldn't be simpler, and we don't think you'll have any trouble finding these in your local grocery store.
- Water - Equal parts water and sugar are used to make the easy blueberry and thyme simple syrup.
- Sugar - Used to make the simple syrup, plus a little extra to rim the glass.
- Thyme - A large tablespoon is the perfect amount for infusing the blueberry simple syrup with an herby flavor. An extra couple of sprigs also make for the prettiest garnish!
- Blueberries - For the blueberry simple syrup (of course!) plus some extras for a fruity garnish. I love adding a couple to a cocktail pick, plus dropping a few in the drink! For the simple syrup, either fresh or frozen blueberries work great.
- Lemon wedge - A lemon wedge works great for making the rim of your glasses slightly wet and sticky so that the sugar sticks.
- Lemon Juice - A little bit of lemon juice adds the perfect zestiness to this mocktail to balance out the other sweet flavors!
- Maple Syrup - Match made in heaven with the blueberry simple syrup, and adds a little richness to balance the tart flavors.
- Seltzer water - Some plain seltzer water adds both the perfect fizz and refreshing factor to this drink.

Step by Step Instructions
This from scratch beverage is super easy and ready in under 30 minutes. Since either fresh or frozen blueberries work for the simple syrup, it's also perfect for any time of year!
STEP 1: Make the blueberry and thyme simple syrup. Start by making the simple syrup. Add the water, sugar, and thyme to a medium saucepan and bring to a boil, stirring until sugar has dissolved, 2-3 minutes. Add the blueberries and continue to simmer until they have broken down and the sauce begins to thicken, about 10-15 minutes. Let cool slightly then strain into a jar, pushing down on the blueberries to release as much of the simple syrup as possible.
STEP 2: Rim two glasses. Add sugar to coat the bottom of a small plate, then use a lemon wedge to wet the rim of 2 glasses. Press the rims of the glasses into the sugar to coat.
STEP 3: Finish the mocktails. Add 3 ounces blueberry and thyme simple syrup to the bottom of each glass, then fill each glass about ⅔ of the way with crushed ice. Add 1 ounce lemon juice and ½ ounce maple syrup to each glass. Top each off with seltzer, then garnish with blueberries and thyme.

- The blueberry and thyme simple syrup is key! It's really so easy, but adds the most delicious flavor to this drink.
- I definitely recommend adding the sugar rim and garnishing this drink with extra blueberries and thyme. They're such simple steps but add such a fun aspect!
- Try not to skip the lemon juice! While the simple syrup and maple syrup add such a delicious sweetness level, the zest from the lemon juice perfectly balances out this drink.

What's the easiest way to make crushed ice?
My favorite way to make crushed ice is to add some regular ice cubes to a plastic bag, place the bag on the counter, and gently pound the ice with a meat tenderizer until it's crushed.
Can I substitute the maple syrup for something else?
Honey would be a great substitution for the maple syrup!
Storing and Freezing
The blueberry and thyme simple syrup can definitely be made ahead of time and stored in the fridge. Once ready to serve the mocktails, continue with steps 2-3.
